I love to cook.
Really, it’s something that I found after spending years as bartender, caterer, sous chef, server and now ultimately owner. My cuisine ranges from the most rural recipes of Latin America, the rich and vibrant food of Spain and Italy, exotic and provoking spices of India and North Africa to the challenging and beautiful food of Japan and Thailand. Primarily trained in haute French cooking, I like to take all that which can be done to the plate with detail, elegance and exception.
Having excellent teachers never hurts.
After achieving a degree in business, I decided that food was truly my calling. Finding inspiration from chefs growing up and later from those under whom I’ve studied, my passion for cooking led me to culinary school and then on to apprenticeship. Working for Logan Restaurant as Sous Chef and now as Chef/Owner of Tranche de Vie, I have seen an amazing variety of cooking methods and styles.
I am a locavore.
Local foods have been a strong focal point for Tranche de Vie dishes. Supporting local farmers, producers of artisan ingredients and those that truly care about what they are making provide the raw materials that make what I do that much easier. I think that it was when I was growing up in Petoskey that I saw so much of what I really love now. Local farmers bringing produce to restaurants who then turn those ingredients into unbelievable dishes. The only thing I wish is that I could share these things with everyone. That’s why I ask you, when can we work together?
